Caviar and CITES explained

All sturgeon species are protected under CITES, the Convention on International Trade in Endangered Species. For buyers, that means every legal tin of caviar can be traced back to its source. This guide explains what CITES means for caviar and how to read the label.

Why caviar is regulated

Wild sturgeon populations have declined sharply, and all sturgeon and paddlefish species have been listed on CITES since 1998. International trade in caviar is only legal with the right CITES documentation.

Today almost all caviar in legal trade comes from farmed sturgeon. All of our caviar is farmed.

How to read the CITES code on a tin

CITES requires every primary container of caviar to carry a non-reusable label with a standard code. It typically shows:

  • Species: a three-letter code, for example HUS for Huso huso (beluga) or GUE for Acipenser gueldenstaedtii.
  • Source: C for caviar from captive-bred (farmed) sturgeon, W for wild.
  • Country of origin: the two-letter ISO code of the country where the caviar was harvested.
  • Year of harvest or repackaging.
  • The official registration code of the processing or repackaging plant.
  • A lot or batch number for traceability.

What it means for trade buyers

Within the UK, and within the EU, caviar moves with its CITES label and supporting documents. Shipments across borders, for example from the UK or EU to the Gulf, need CITES export and import permits, which add time and cost to an order.

Every tin we sell carries a CITES label with its species, origin and batch code, and we provide CITES documentation for audits and export orders.

Questions

Is beluga caviar legal?

Caviar from farmed beluga sturgeon can be traded legally with the correct CITES documentation. Rules for wild-caught caviar are much stricter.

What does the C on a caviar tin mean?

It is the CITES source code for captive-bred, meaning the caviar comes from farmed sturgeon.
