Taste and texture

Medium pearls from golden to dark brown, with a nutty, complex flavour and a clean, briny finish. Compare all five in our caviar grades and types guide.

How chefs use it

Works as well on its own as it does in a dish: with blinis, on oysters, or with eggs and potatoes on a brunch or tasting menu.

Questions

Is oscietra the same as osetra?

Yes. Oscietra, osetra and ossetra are spellings of the same caviar from the Russian sturgeon.

How does Oscietra compare with Royal Baerii?

Oscietra pearls are larger and nuttier; Royal Baerii is smaller and milder, which makes it a versatile house caviar.
